I Thought Everyday Was Pancake Day.

Amidst all the excitement that is Super Tuesday, Fat Tuesday, and the parade celebrating the Giants' victory in the Super Bowl, something got overlooked - International Pancake Day (IPD).

Bet you didn't know about IPD, huh?  Well it's a regular enough event (at least it is in Kansas and England), celebrated every Shrove Tuesday, so as to clean out the pantry of all those foods forbidden during Lent.  You see, there is a religious tradition to IPD (perhaps explaining why most people think of pancakes as heavenly).  But, there's also a commercial aspect to Pancake Day -- the kind of commerce practiced by the International House of Pancakes (IHOP).  IHOP is so upset that this February 5th has become a harmonic convergence of all sorts of things, that they've taken action.  They've officially postponed Pancake Day until next week.

How can they do this?  By what right did IHOP have to rearrange the calendar and shatter religious tradition?  Did they lobby the Pope and get a papal dispensation to change the date?  No, they didn't, but they did convince several state governors to go along with this ploy.  It remains to be seen if this passes quietly or whether the slathering on of creamery butter and fresh maple syrup on February 12th becomes the culinary equivalent of a latter day Reformation Day.  Should the hallowed observation known as Pancake Day be sacrificed on the altar of grubby (albeit tasty) commerce?  Even when it will benefit a children's charity?

Over in England, Super Tuesday has no serious implications thus our brethren across the pond stuck with tradition.  Kansans likewise hewed to tradition.   This may be partly due to the fact that only Democrats in the Jayhawk state are participating in Super Tuesday.  Perhaps the reason for this is the Democrats seem to be all about change and Republicans are less so this political year.  Thus, Fat or Shrove Tuesday has always been Pancake Day to Republicans and so it remains in Kansas.

Pancake Day wasn't just postponed, it was cancelled outright cancelled outright in Ripon, England.  Too many safety and health concerns over the kiddies tripping and skinning their knees on cobbled streets.  No wonder they lost a freaking empire.

Trader Joe's gluten free frozen pancakes are morning favorite of mine. I toast them up and smother them in organic grade B canadian maple syrup with some chicken sausage and a bit of guacamole covered broccoli. They've actually kept me from one of my other favorite gluten free pancakes--the blueberry-banana styles ones cooked up at the vegan place up the street.

It is easy to buy small plaster models of what you think life is like.

Maybe it's because it's what I grew up on, but my favorite pancakes are ones I make from Bisquick on a hot, greased griddle. That is one thing - you've got to grease the griddle (I use Crisco, but I guess lard would work too...). Pancakes on non-stick griddles (or with spray on oil on the griddles - ugh!) just aren't anywhere near as good.

Back when I was living on a pittance, pancakes were one of the things that kept me alive.  Despite that, I still love them, especially Aunt Jemima Buckwheat mix, hard to come by, so I pick up two or three boxes whenever I see it.

One night, I mixed up a batch of pancakes and tossed in the last of my raisins to spice them up, then retired to the living room for a few minutes to toke up.  When I got back, I saw dark lumps in the batter, and thought with horror that roaches had invaded the last of my food.  I was completely broke at that point, not a bit of food or money left in the apartment, so I decided the only thing to do was pick the little bastards out and depend on the frying pan to sterilize what was left.  I picked the first one out, and discovered I'd completely forgotten about the raisins.

My favorite pancakes are the ones that I eat at the annual  pancake breakfasts in Burton, Ohio.  The local volunteer fire department puts it on as a fund-raiser, and it coincides with when the maple sap is running and being boiled down into maple syrup.  I've been going there for 50 years or so, and they're the best.

OTOH, I also like to make my own buckwheat pancakes and cover them with the same maple syrup that I buy there and take home.  The stuff isn't cheap (~$40/gallon), but worth every penny of it.

By comparison, IMHO, IHoP is crap.  The artificially-flavored maple syrup that they serve (mostly corn syrup) is awful.  You haven't lived until you've had real maple syrup.  Kind of like single-malt Scotch whisky, although I try to stay away from that for breakfast.  ;-)

there's only one way to find out...

I favor whole grain pancakes and I like to make my own blueberry syrup to slather on them.  Take a cup of maple syrup and one cup of blueberries and boil them in a saucepan until it reduces to one cup of blueberry maple syrup mix.  That should take about 15 minutes.  

Combine two cups whole grain pancake mix, two cups of buttermilk, six tablespoons wheat germ, two teaspoons vanilla extract, a quarter stick of butter, two teaspoons of ground cinnamon, and two tablespoons maple syrup.  Whisk to blend.

I think you can figure out how to do the rest all by yourselves.  BTW, Sunday is pancake day around our house.
