Wine or Whine?

Lots of people are finicky about which is right for which meal.  Red wine with red meat, white wine for white meat.

I'm not that particular.  My personal favorite is Widmer's Lake Niagara, but that's just me, and it's hard to find.

Merlot is great, too as is Chardonnay.  Rieslngs are good, too, sometimes, as are Chablis, particularly good with pizza.

For an apertif, I rather like blackberry wine.  

Oh, good heavens, they're are so many (not to mention single-malt Scotch whisky) to try during my time on this planet.

Pinot Noir and Shirah/z are fine poured straight from the bottle, but to get the most from merlot takes a little more prep. The key to unlocking the fruitiness of the latter is aeration. Pour the bottle into a second vessel (long stream and big landing splashes = more oxygen) and then pour from that one into your glass. It makes a difference.

Of course you have to consume the entire bottle that session. All that aeration literally makes the bottle ephemeral--a creature of a day.

I have eccentric taste in wine (as in most things).  I prefer sherry to wine, and my favorite is Golden Cream, a Canadian sherry that tastes almost exactly the same as the vastly more expensive Harvey's Bristol Cream.

I have been known to drink Merlot, but when I do I mix in some maple syrup for added flavor.  This is, of course, horrifyingly decadent of me.  If you refuse to invite me to dinner as a result, I will understand.

Now you've got me wondering: how would some cheap-ass merlot taste if fortified with a splash of Sortilège maple syrup liqueur?

Thanks for the link,  I like Bourbon whiskey and I love maple syrup (but only the real thing).  After all, I like Drambuie, and that's basically Scotch whisky & honey.

It's just that I refuse the notion that one wine goes with one food.  If I want white wine with beef that day, who cares?   Red wine with fish?   I have different tastes on every given day.   If the server or consomliere is offended, screw them.  I'm the one eating, and I'm the one picking up the tab.

It's just that I refuse the notion that one wine goes with one food.

A big part of the problem is that "white vs. red" is a poor breakdown. Maybe it served its place back in the 1950s, when "white" meant chardonnay and "red" meant cabernet sauvignon. But back then, Ragu was daringly ethnic and the ne plus ultra of bread was Wonder, so maybe that palate was a touch restrictive.

These days, people should have a more targeted way of matching taste expectations. The way I figure, you could probably do it in eight categories*, which is well in the "seven, plus or minus two" guideline of the human psyche. (Frankly, I think a bit less of wine marketers for not having already come up with a catchy way of presenting this.)

* oaked white, tart white, sweet white, full-bodied red, spicy red, fruity red, sparkling, dessert.

I like red wines, mostly.  Pinot Noir & Shiraz are probably my top two for drinking just to drink.  I like some whites - Riesling is fine, Sauvignon Blanc too.  I generally avoid the Merlot or Merlot blended reds - there's something about Merlot that just goes against me for whatever reason.  Same with Chardonnay - I'm just not a big fan.  Mostly, though, I prefer beer.  Back when Bud & Bud Lite were all you could get, it was pretty hard to find a reasonable beer pairing for many meals, but most decent restaurants have enough microbrews (at least in bottle, if not on tap) that you can find a decent match.

Yes, I too remember Mad Dog, as well as Annie Green Springs and Boone's Farm.  How in the hell I ever survived high school, I'll never know.
